This herb is originally used for the beam mash, but is also very tasty over the meat.

Recipe: Brabantse Balkenbrij.

Two full 8-liter pans are used to prepare the large quantity.
Buckwheat, lard, streaky bacon, rummweed and nail grit are the ingredients.
Lard is baked out and the grease is used to bake the slices of slurry pulp.

The cracklings go through the beam knit.

The streaky bacon is brought to the boil in the water and allowed to pass for 2 hours on low heat.
Abdominal bacon (that is good for bread when it has cooled down) and the buckwheat in it.
Calmly sprinkle and you will not get lumps.
Add spices and greaves, possibly a gravy spoon and let it puff on the gas.

Make sure you get a firm mush (you get muscle balls) and put it into bowls that are pre-powdered with buckwheat.
Let it cool down, then it will stiffen and you can cut it into slices.

Recipe: Gelderse Balkenbrij

Setting up a pan of water, [three liters] with 250 grams of raisins, 250 grams of currants 250 grams of fresh pork belly bacon, in cubes, 50 grams of ragweed, a tablespoon of salt
and cook a tablespoon of sugar, until cooked.

Then add about 250 grams of flour and 500 grams of flour, stirring vigorously [not too little bookkeeping flour otherwise you can not bake it], to a thick mush, if the spoon stays upright, it is good.

Pour the contents into deep dishes, where some of the bookworm flour has been scattered, a little over it, and let it cool down.

Turn the shapes, and cut slices of more than one cm thick.
Bake in butter or margarine.

Serve with sugar.

Recipe: Rotterdam blood rolls or herb rolls

Ingredients for 6 people
500 gr of flour
200 gr sucade
20 gr rompel herb
20 gr sugar
10 gr salt (2 teaspoons)
25 gr fresh yeast or 5.5 gr dry yeast
30 gr of butter
3 dl lukewarm milk or water

These buns have a red color due to the added mess. They thus recall the bloody animal sacrifices that were brought about Christmas in times past. In the Waterway area, these sandwiches, filled with finely chopped sucade, are still highly appreciated. Especially at Christmas and Easter.
